Tasting Notes 2007
Woodthorpe Sauvignon Blanc ‘07 is a pale lemon colour with the aromas and ﬂavours of passion fruit, pear, lime, and fennel. The palate is crisp and concentrated with a long, ﬁne ﬁnish.
Woodthorpe Sauvignon Blanc ‘07 is best served chilled, either as a refreshing pre-dinner glass of wine or partnered with summer salads, soups, seafood dishes, grilled vegetables and lightly spiced Asian foods. It will continue to evolve in bottle for two years from harvest.

Upon arrival at the winery, the grapes were carefully handled with light destemming, chilling and draining to release a ﬁ ne, clear juice. This was then fermented to complete dryness at cool temperatures in stainless steel tanks to preserve the fresh, ripe characters achieved in the vineyard. Following fermentation, the resulting wine was racked off its fermentation lees and returned to tank for further maturation. It was then ﬁ ned before bottling in May 2007.
Woodthorpe Sauvignon Blanc ‘07 is a single vineyard wine that was harvested from Te Mata Estate’s Woodthorpe vineyard between 13 and 21 March 2007. The 2007 vintage has extended to four, a succession of wonderful grape growing seasons in Hawkes Bay. Again, Woodthorpe Sauvignon Blanc shows the quality of the vintage with its exuberant array of crisp, tropical fruit ﬂavours.
