Tasting Notes 2005
Sauvignon Blanc from Woodthorpe consistently displays the characteristics of full ripeness; intense citrus and floral aromas, with concentrated green tropical fruit flavours on a long, fine palate.
Woodthorpe Sauvignon Blanc 2005 is the palest green in colour, with aromas of lime, feijoa and white peach. The concentrated palate provides flavours of passionfruit and grapefruit, with a fine texture and long finish.
Woodthorpe Sauvignon Blanc 2005 is best served chilled, either as a refreshing pre-dinner glass of wine or partnered with salads, seafood dishes, or lightly spiced Asian foods. It will continue to improve in bottle for two years from harvest.
Total acidity as tartaric: 6.7g/l
Residual sugar: Nil
These grapes were carefully handled at the winery to allow full expression of these flavours. They were destemmed, chilled and drained to release fine, clear juice which was then fermented to complete dryness at cool temperatures. The resulting wine was then racked off its fermentation lees before receiving three months’ maturation in tank. It was fined before being bottled in August 2005.
Woodthorpe Sauvignon Blanc 2005 is a single vineyard wine made from grapes grown exclusively at Te Mata Estate’s Woodthorpe vineyard and harvested between the 11th and 24th March 2005.
Sourced exclusively from Te Mata Estate’s own vineyards, the estate vineyards wines are blended to represent the best qualities of their variety, vintage and Hawke’s Bay origin.
