The individual grape parcels of each variety, from each plot, were destemmed and given a warm, plunged fermentation with extended maceration on skins. The resulting wines were run off to a mixture of new and seasoned French oak barrels for 16 months’ maturation. During this time, they were regularly topped, racked, blended and egg-white fined before bottling in September 2007.
The grapes for Te Mata Estate Woodthorpe Merlot/Cabernet ‘06 were harvested from our Woodthorpe vineyard between 25 March and 23 of April 2006.
