The grapes were destemmed, crushed, chilled and drained, then fermentation in 225 litre oak casks, most of which were second and third use barrels.
The wine was finally blended and bottled in late spring.
The grapes were hand harvested on the 18th and 27th March.
Cape Crest and its gannet symbol refer to Cape Kidnappers, the southern point of Hawkes Bay, home to the world’s largest mainland colony of these remarkable marine birds.
