The grapes were destemmed, crushed, cold drained and settled, and then half the juice was fermented in new and older barrels and the remainder in tank. Following barrel ageing and final blending the wine was bottled in late September.

The hand harvested grapes for Cape Crest Sauvignon Blanc 1995 came into the winery at the end of March.

Cape Crest and its gannet symbol refer to Cape Kidnappers, the southern point of Hawkes Bay, home to the world’s largest mainland colony of these remarkable marine birds.
